The wine is Falu Red in color. The nose has lovely high notes supported by black tea, umami, wild summer berries, and Shasta daisy blossoms. The mouth shows Santa Rosa plum, anise and the classic faint element of cured meats. The texture is broad and persuasive supported by supple tannins and lingering ideas of high mountain sage.
The Negev Desert is an extreme terroir, exceptional for growing flavorful wine grapes. At 850 meters / 2790 feet in elevation, it’s desert terroir where temperatures are quite warm during the day. At night, due to the elevation, it becomes quite cool.
For Cabernet Sauvignon, the low fertility of the soils produces luscious full flavors that signature the Negev Desert.
